you can make 4 parts with just 2 folds and 1 cut so i am going on to find out if i can get any further

Of course it depends on where the fold is made and how the folded sheet is cut. Using your instructions I find that with two folds I get 3 separate pieces, and one of the pieces is the result of a part that is inside another region of the folded sheet. Using this principle and when folded in the tight way, I reckon to get one additional piece for every fold. So 2 folds give 3 pieces, 3 folds give 4 pieces, etc.
